Where did December go? Tomorrow is already Christmas Eve, this month has really flown by! I'm sharing with you the recipe for one of my favourite Christmas cookies - whipped shortbread! They really are quick and easy to make so if you have left all of your Christmas baking to the last minute these will be perfect for you!
Whipped Shortbread:
Ingredients:
2 Cups Butter
1 Cup Sugar
3 Cups All Purpose Flour
1/2 Cup Cornstarch
Sprinkles to Decorate
Instructions:
1 - Preheat your oven to 375 degrees. Line cookie trays with parchment paper.
2 - In the bowl of your stand mixer, beat butter and sugar until light and fluffy.
3 - In a small separate bowl, combine flour and cornstarch. Slowly add to butter and sugar mixer. Mix until well combined.
4 - Drop cookie dough onto lined cookie trays. I used a 1.5 inch ice cream scoop. You could make them smaller or larger if you like.
5 - Decorate the tops of your cookies with sprinkles or crushed candy cane.
6 - Bake in the oven for 12 minutes. Be sure to adjust the time if you are making larger or smaller cookies.
These cookies are best served the next day.
